Sautéed Sweet corn and zucchini

Serves 4
INGREDIENTS:
2 pieces of bacon, cut into 1/2 inch pieces
4 ears of corn, corn cut from the cob and a knife run along the empty cob
2 medium zucchini, chopped into small pieces
1 small onion or leek, minced
1 T apple cider vinegar
2 tablespoons fresh parsley, chopped fine
In a saute pan, add bacon and cook over medium heat until bacon is crispy. Remove bacon from pan and add corn, zucchini, and onion. Cook 10-12 minutes or until the corn is speckled brown on pieces, onion is translucent and zucchini is cooked. Once cooked, add apple cider vinegar and parsley, mix and serve.
